Last night I soaked nuts and beans for today. Tonight, I got home from work and made soy milk from these beans. Then, I turned that soy milk into tofu. That’s right. I’ve got a brand new tub of fresh tofu in my fridge!
The cup of cashews turned into something unexpected:
I found a recipe on YouTube to just puree the soaked cashews in water, add sugar and vanilla extract and serve over frozen fruit.
I’m surprised cashews can taste like that! This is definitely going on my short list.
Since I soaked so many soybeans, I used one cup for roasted soy nuts. This is a healthy, addictive snack full of fiber and protein. One cup just won’t last very long in this house. Our kids love them.
Dishes washed: Check. Kitchen clean: Check. Time for sleep!
