I’m working from home today and happy to do it. Do you see that snowstorm smacking America’s east coast? I’ve already shoveled my driveway
twice thrice today. In between my job and the snow, I found myself surfing the web for lunch ideas.
Here’s what we ended up making:
We didn’t just make this up! Dr. Alex Yu posted a video tutorial:
I showed Jen and she got excited about trying to make it too. But we didn’t have any dumpling wraps. No problem. Jen whipped up some dough, threw it in the bread machine and soon she was slicing out perfect homemade wraps.
A couple of deviations from Dr. Yu’s recipe … we used Asian chives, okara, yellow onion and one teaspoon of vegan butter. Also, we didn’t have red bell pepper so we use green pepper and added jalepeño.
