Sometimes you get lucky and all the ingredients of a recipe blend together like the notes and chords of a great song. This recipe is my own experiment and I have to say, well done Dave!
2 tablespoons onion
2 minced garlic cloves
1/2 cup of cubed extra firm tofu
1 tablespoon tamari soy sauce
2 cups okra
1 cup flour dumplings
1 can coconut milk
1 handful of fresh spinach
1/2 cup cilantro, sriracha sauce and cashews
Stir fry the onion and garlic with tofu in a tablespoon of oil until braised. I used grapeseed oil. Add the okra and cook on medium heat for five minutes. Add the dumplings, spinach and coconut milk. Bring to a boil. Mix in the tamari soy sauce and add some ground black pepper. I simmered for about 5 to 8 minutes and remove. Garnish with cilantro, sriracha sauce and cashews!
