Here’s an easy meal. Hummus can be made quickly with a food processor. I mix 1 and 1/2 tablespoons of tahini with four tablespoons of lemon juice. Then I added a drained and rinsed can of chickpeas. Add 1/2 teaspoon of sea salt. Then add 2 cloves of garlic. That’s all there is to it!
On the burrito, spread the hummus liberally and add onion, raw spinach, tomato and guacamole sauce. The result is a protein-filled sandwich that will blow your taste buds!
