When I arrived home from work today, I found my kids opening and eating pistachios. “Dad, how about pistachio ice cream?” our daughter asked. I thought about it and remembered some bananas I had in the freezer. “Okay! We can do that!” I said with a smile.
Making “ice cream” from bananas is really simple. Just add frozen bananas to your food processor with some liquid and give it a whirl. In a couple of minutes, it will have the consistency of smooth ice cream! Here’s the twist. We made pistachio milk! We cracked open a cup of pistachios, washed them and dropped them in our milk maker. Ten minutes later, we had fresh pistachio milk! Mixed with the bananas, the end results was “Pistachio-Banana Ice Cream Cones!” The gummy bears were our daughter’s idea!
Happy kids, too!
