We we so happy with our first try at almond cheese, the second try was a foregone conclusion. The other day I deskinned 2 cups of almonds and mixed according to the recipe. After it set in the refrigerator it was perfect. Later, I put the cheese in our dehydrator and went to bed. The next morning I was expecting perfect cheese. But what I got was crumbly and dry. I was so disappointed!
All day it bugged me. Did I waste two cups of almonds? No! When I got home, I put the crummy cheese back into the food processor and pulsed. It pulverized the cheese! Then I slowly added 1/2 cup of water and it immediately reconstituted into the creamy cheese of the night before the dehydrator. Problem solved.
The cheese went back in the refrigerator to set in the tofu press. Lesson learned. No more dehydrator for this kind of cheese!
