We have so much okara! We’re always looking for good ways to add all that protein and fiber into our diets and not let it go to waste. Yesterday my lovely wife Jen added the leftover pulp from coconut milk with soybean okara and added flour, baking powder, baking soda, truvia and some soy milk. The result was a luscious, moist healthy dessert. These brownies look like a great idea. Can’t wait to taste them!
-250g okara(the pulp left from soy miIk)
-70 g raisins
-150g whole wheat flour
-1 teaspoon baking powder
-20 g cocoa powder
-1tablespoon peanut butter
Mix the first 3 ingredients in a blender then add baking powder and peanut butter into the mixture.Divide the composition in half and mix cocoa powder into half the mixture.Once thoroughly mixed, transfer to a small pan lined with parchment paper .Bake it until a wooden pick inserted in center comes out with moist crumbs clinging.
