I’ve never tried extemporaneous cooking. No recipe here. I’m winging it! So let me write it down for you.
- 1 can black beans
- 4 cloves garlic
- 1/4 onion
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 tablespoon red pepper flakes
- 1 tablespoon sriracha sauce
- 1/2 cup nutritional yeast
Mix for a few minutes in your food processor.
On a baking sheet I laid out aluminum foil and placed two flour burritos. Then I added the black bean filling and topped it with two slabs of my homemade almond cheese.
Then, I set the oven to 375ºF and baked the tacos for 12 minutes. A couple of things that I noticed: The filling is spicy. Caution if this is not to your taste. Also, the flour burritos will assume the shape in which you bake them. I didn’t know that! Next time I think I will get creative.
I garnished with lettuce, tomato and wasabi sauce. Delicious! The shells are crunchy and the taco tastes like a spicy taco. Not missing meat here. This is an excellent dinner and tastes even better with a Sam Adams (which I happen to be drinking right now).
