My lovely wife Jen has been busy as a bee lately. And I have been lazy! Jen is baking a lot more these days and adding okara into the dough. We make soy milk about two times a week. The okara has to go somewhere. It’s high in fiber and protein and we don’t want it to go to waste. When added to the dough, it really makes a difference in the richness of flavor. It also makes the bread chewy! Okara, by the way is the byproduct of making soy milk. When you blend the soybean with water, the liquid is the milk and the leftover pulp is called okara!
When I began my vegan journey a year ago, Jen told me she had no intention of cooking two meals at a time. I jumped in and made my own menus with gusto! But over the year, as the family has enjoyed many of my vegan meals, Jen is starting to cook vegan. The past couple of days I’ve been pleasantly surprised with some great vegan meals that I didn’t plan for or prepare! Thanks Jen!
It’s Saturday. We’ve got lots to do today. We’re going to a body pump class this morning. Our son has to attend a birthday party. Our daughter has ice skating practice. I have no idea what awesome vegan foods await today. We’ll see. Have a good one!
