Not a fan of the earthy taste of beets, I’ve found a way to capture its health benefits anyway: Beet Hummus! The plusses are explained here in depth, but the one that caught my eye was that beets are high in many vitamins and minerals.
Beets are also apparently nature’s Viagra! They even help you “beet” depression (groan). “Beets contain betaine, the same substance that is used in certain treatments of depression.”
According to Simple Recipes, the ingredients are beets, tahini, garlic, lemon, cumin, and salt and pepper. They have detailed instructions. You do have to cook the beets before mixing everything in the food processor. So it is a little more involved that chickpea hummus.
It tastes like hummus! We tried some on crackers yesterday. It’s an easy way to take advantage of a healthy veggie that often gets overlooked.
