My wife and I enjoyed an awesome lunch today. We’ve got some fried collard greens mixed with okara, kale, romaine lettuce, radish, germinated brown rice, carrots, avocados, cherry tomatoes, raw unsalted sunflower seeds and to top it off, a homemade cashew cream sauce made with grape juice!
For breakfast, I enjoyed Miso Soup with Silken Tofu. Yesterday, Jen and I made tofu. But it was our first attempt at silken tofu. It turns out that it is easy to make. After curdling the soy milk, and adding the coagulant, you just don’t strain. It keeps the tofu from getting firm because it has all that extra water content. Anyway, miso is made from fermented soybean paste. You can buy it at any Asian market or even Whole Foods. I boiled two cups of water with about two tablespoons of miso. Then I added the silken tofu. When you’re serving, you drop in the chopped scallion. I ate about a cup of germinated brown rice too.
For dinner I had another plate of greens, but this time with some fried homemade tofu, onions and even green beans. The cashew sauce from lunch, along with Korean cochujang (red bean paste) and Ssriacha sauce gave a spicy taste to this healthy meal. You just put the toppings in a large romaine lettuce leaf and enjoy. I also had a glass of homebrew Nutbrown Ale, which I made a month ago and bottled two weeks ago. Life it good!
Remember: G-BOMBS = Greens, Beans, Onion, Mushrooms, Berries and Seeds. Eat that every day and you won’t gain weight. It’s healthy. Stay vegan!
