These days my daily diet doesn’t vary that much. It’s oatmeal with berries and seeds for breakfast, salad for lunch and a veggie stir fry for dinner. It’s still working! I’m losing weight almost every day and I feel great.
- 2 cloves garlic, minced
- 1/2 medium onion, chopped
- 3-5 sweet peppers, chopped
- 2 cups oyster mushrooms
- 1 cup okra, sliced
- 1 cup spinach
- 1/2 cup chickpeas
- 1/2 cup baby potatoes, cooked
- 1/4 cup celery, diced
- 1/2 cup carrots, diced
- 1 tablespoon red pepper flakes
- 1 teaspoon basil
- Mrs. Dash no-salt seasoning, to taste
For this stir fry, I add some veggie broth to the skillet. No oil! I start out on medium high heat and add the garlic and onion. Then gradually add the rest of the ingredients. By the time you get to the spinach, add some more veggie broth, lower your heat and cover. When the spinach is cooked, add the spices and simmer for a few more minutes. I served with a 1/2 cup of brown rice and some raw spinach.
I’ve been strictly following the diet laid out by Dr. Joel Fuhrman’s, “Eat to Live” book and companion cookbook. This morning I was 209 pounds for the second day in a row. I’m certain to meet my goal of 205 within the week. Now I need to start thinking if it’s possible to weigh under 200 pounds! I lift weights, so I know a lot of my 6 foot, 2 inch frame is muscle mass. Let’s see. I haven’t weighed so little in more than 25 years! Stay healthy!
