My lovely wife Jen was born and raised in Seoul, Korea. Kimchi is a standard part of every meal in Korea! So it goes without saying, that we eat a lot of kimchi. I don’t have an exact recipe, but I’m sure there are many recipes out there via Google. Our favorite YouTube Korean chef is Maangchi!
That said, I did manage to shoot a short video interview with Jen moments ago. The camera is in the bucket with the kimchi as she is mixing so the audio isn’t the best. But she said it’ll take two days to ferment. The ingredients she used were Napa cabbage, red pepper flakes, garlic, apple, wasabi, salt, pepper, onion, ginger, scallions and fish sauce. She makes a vegan version for me (I’m such a pain).
Kimchi has a strong odor, but an addictive spicy taste. It’s also one of the most healthy foods you could add to your diet!
