I don’t know why, but I always gain weight when I eat spicy noodle vegan soup! For some reason, it never stops me. My mouth is on fire thanks to a tablespoon of red pepper flakes and Sriracha sauce! This is one of my all-time favorite vegan meals. This time I added Korean Tok (sliced rice tubes), mushrooms, cashews, homegrown green onion and rice noodles. There’s also some soft tofu, raw spinach and basil and lots of crushed fresh garlic!
Here’s my weight stats from this morning. Watch, I’ll be much heavier in the morning. Of course, all this beer could be to blame too!
