Lunch yesterday was so fast and easy to make, I decided to make Miso Soup again, but this time with rice and kimchi! This time I had loads more tofu. Very tasty, indeed!
For dinner, I chopped up some pinto beans and added some Wegman’s Black Bean Sauce. I know, why? We didn’t have any black beans and I needed to use this before it went bad. Fresh and spicy! I love this stuff.
Man, I went on the longest run of my life today = 8.63 miles! No marathon, but for me, it’s significant. It means I will run a marathon some day. I’ve just got to continue to take it up a notch. I can do it. I know I can!
