Today we went to the Korean market west of Baltimore. We loaded up on supplies, which included some organic miso. It worked well with 2 cups of water! I added two teaspoons of miso and brought it to a light boil. I added cubes of extra firm tofu, two minced garlic cloves and a chopped head of bok choy. I also added some Asian chives. After about 8 minutes, it was ready to serve over a cup of brown rice and with a side of paekchu kimchi! The Blue Moon made it a perfect dinner. I’m full and quite relaxed on my first day of the weekend. Have a good one!
