Happy November! I tried something a little different this morning: Bob’s Red Mill Organic Scottish Oatmeal. It’s a finer grind than my usual steel-cut oats, and results in a texture similar to cream of wheat! I soaked a 1/2 of the Scottish oats overnight and brought it to a boil. It was creamy and ready to eat after only five minutes. I added my usual mixed berries, nuts and seeds, but it was a little dry, so I also added a 1/2 cup of almond milk. What a great breakfast of 280 calories (plus whatever more came from my additional fruit/nuts/seeds mix). I’m stuffed and ready to face November 1st. It’s raining and 47ºF here in wonderful Maryland.
