Folks, I hope you’re Thanksgiving celebration was as happy as ours (if you celebrated!). We had a great relaxing day of doing nothing but eating and enjoying family time. My family isn’t vegan yet. I’m the sole one. But they are leaning vegan. I still fix my own meals. But they do enjoy my cooking occasionally.
For this meal, I cheated. I got this package of Bird’s Eye Frozen Teriyaki Stir-Fry mix. It took me all of 8 minutes to heat up on the stove. No recipe to share! I did add the extra-firm tofu! The sauce was included with the mix.
The kids are growing fast! Our daughter is 10 and our son will be 9 in January. We are thankful to each other for the good fortune of being together. Someone at work asked me the other day, “If you’re not a Christian, why do you celebrate Thanksgiving?” I had to shake my head. I am so thankful to my wife for being with me every step of the way. I could not live without her. She’s wise, wonderful and puts up with a knucklehead like me. What more could a guy ask for? I’m thankful that together we have some awesome kids. Yes, freethinkers and humanists can feel the same feelings of gratitude during Thanksgiving. We just thank each other instead. So … Happy Thanksgiving!
