Happy New Year! I’m enjoying my biggest meal of the day with a delicious serving of mushroom soup. I added these slices of portobellos along with tofu, baby potatoes, spinach, olives, green onions, cashews and brown rice!
I started with a quart of veggie stock, some garlic and basil and some jalepeños.
Hope you have a great year. It’s a great time to go vegan, or at least try. I was fortunate to be able to quit meat, dairy and eggs after watching the documentary, Veguctated. That’s all it took. I lived all my life without really considering where my meat came from. No more. Now I know the truth. I’ll never go down that path again.
Here’s my motto now: “Do no harm.”
