This is so easy to make! My wife cut everything and left it on a plate for me (our daughter has ice skating tonight). Normally I prepare all my own meals, as I’m the only vegan in the house! However, my wife was extra kind and cut everything: carrots, onions, garlic, mushrooms, bok choy and peppers. I dropped it into the saucepan with a tablespoon of oil and some tofu cubes.
After about five minutes, I added some Wegmans Stir Fry Sauce and cooked for about eight more minutes.
That’s it! I served with a topping of roasted sesame seeds and a side of brown rice.
I am officially stuffed!
